Though this book is the prime reference book of chef's, gourmets and experts, it is equally useful and convenient for the home cook. Considerable information given on riches of wines from the French vineyards. Descriptions of cooking processes; full details about foods, nature, quality, how to cure, treat, preserve; food history; table service, banquets, food values, and diet.
