Charming cover, brilliant color lithograph illustrations. Several black & white photographs, and menus, vibrant blue-green highlights and borders on some pages. Vibrant front and back lithograph color prints. Photos do not fully capture brilliant color hues & crisp lines. Front litho print sharp and crisp, girls dress is yellow. Front and back have white background; just way picture scanned. No blur.
KNOX Gelatine History:
In 1890, Charles Knox developed the world's first pre-granulated gelatine. He experimented until he found process that resulted in product superior to any on market. It revolutionized gel cookery. When Charles Knox died at 58, Mrs. Knox, at age 50 became head of the largest gelatine manufacturing company in the United States. At a time when few women were even in business, she reevaluated her husband's business methods and elaborate advertising stunts.
Gelatine, she reasoned, was bought and used by women; and women were more interested in foods that were economical, nutritious, and easy to prepare. She set up experimental laboratory and developed hundreds of recipes printed on Knox packages, leaflets, and illustrated cookbooks. Mrs. Knox operated the company for more than 40 years She became America's foremost woman industrialist and the first woman to be elected director of the American Grocery Manufacturers Association. Pictorial Review described Knox as being one of the "Six Greatest American Women".
