Dolores L. Latoree, a native of Spain, spent 12 years in the northern Mexican state of Coahuila, in and around the city of Muzquiz, collecting the recipes and remedies of that area. Cooking and Curing with Mexican Herbs is her encyclopedia of the tasty and practical uses of plants found there,. Over 150 delicious recipes are included, for preparing everything from tacos and tortillas to tisanas (tea), and from cabrito (barbecued kid) to caldo de bagre (catfish soup). The recipes are authentic, with slight modifications in some cases, for preparation in North American kitchens.
In addition, everything from arthritis to whooping cough has its own prescription from the herbal pharmacopoeia of northern Mexico and Mrs. Latoree lists more than 130 of these treatments. Onion, garlics, peppers, and many other common plants have multiple use in the sickroom as well as the kitchen. Other herbs like Indian paintbrush (the "hemorrhoid plant") and peyote have exclusively medicinal uses.
