The opening section of the book, "Specialties of the Region," features the historic Maxwell House Hotel, with the Christmas Menu of 1879, and includes a sampling of recipes of the day. Contrasted in the section is the Parthenon, and the United Nations luncheon Menu, prepared for the historic visit of the United Nations delegation to Nashville, summer 1976. With that famous menu are selected recipes of food specialties served on that day.
