"Mexico Through My Kitchen Window" by Maria A. deCarbia , edited by Helen Corbitt , published by Houghton Mifflin Company, copyright 1961.
So here is the English edition of Maria de Carbia's book, introduced and edited by Helen Corbitt, who tested each of its recipes in her own kitchen. There are sections on tortillas and enchiladas, and recipes for every part of a meal, from appetizers through dessert, all with that special south-of-the-border flavor. There is a chapter on Mexican holidays, each with its own particular festive foods. At the very end Helen Corbitt has added a collection of favorite adaptations of Mexican recipes from north of the border. Throughout, the illustrations by Luis Betanzos bring Mexico even closer to view.
