Bananas....How to Serve Them is a 1941 booklet from the Home Economics Department of the Fruit Dispatch Company in New York. This 50 page booklet has everything you might want to know about bananas including how to buy them, how to ripen them, what ripeness do you want for various uses, how to keep them from turning dark and how to slice, mash and flute them. The booklet extols the nutritional virtues of bananas for all phases of life from cradle to the elderly.
There are 56 recipes for bananas for every meal of the day from broiled bananas, French fried bananas, banana cake, cookies and pie, banana milk shakes and ice cream and side dishes and salads with bananas.
The book is clean and the pages are tight and intact. There are a few notations in the margins of a couple of the recipes including that the Banana Spice Layer Cake was good!
