This old ice cream dipper is a No.31 Gilchrist Automatic Ice Cream Disher. Gilchrist's were used in most of the soda fountain shops to scoop your favorite ice cream. It was probably the most popular and commonly used scoop in the industry. This is a size 20 round bowl meaning twenty scoops to the quart. It is nickel plated except for the bowl and scraper which are made of German Silver and it has a wood handle. It is not marked with the Gilchrist name on the thumb lever but it is marked shaft with the name and the size. The scraper inside the bowl is also marked "20". The patent for these scoops was issued in 1915.
It measures about 10 ¾” in length and the bowl measures about 2 1/8” in diameter. It is in very good condition with minimal wear and the spring mechanism works well. It appears to have been used very little, even the gears retain their plating. This scoop is cleaned, not re-plated and not lacquered and in very good original condition.
