The Wise Encyclopedia of Cookery - An Encyclopedic handbook for the homemaker covering foods and beverages - their purchase, preparation, and service. Copyright 1951, Wm. H. Wise & Co. Inc., New York.
This extremely comprehensive 1949 hardcover cookbook has 1,330 pages. Recipes and information are presented alphabetically rather than by food type, so it's easy to find what you're looking for. It's a recipe book and a how-to book for cooks. For instance, a long chapter on freezing foods is followed by description and use of French cook knives, then a description of French dressing, and recipes for more than two dozen variants of French dressings. The book is fully indexed with an extensive glossary. Illustrations appear where appropriate and there are 64 color photographs. The book is in very good vintage condition with no stains or tears and the binding and spine are intact. I found only one recipe where the original owner made extensive notes or comments in the margins, and a few other pages with minor notes like the price per pound of an ingredient. Her name is written on the front flyleaf.
