This is a vintage Gilchrist #31 ice cream scoop in excellent working condition. The scoop has a 2 1/4" Size 16 bowl and measures 9 1/2" in length.
n 1914, Raymond B. Gilchrist finally patented a scoop that his Gilchrist Co. of Newark, N.J., had been making since 1908. It cost $1.50, considered expensive, but it was well-made and became the most widely used scoop in the next two decades.
The Gilchrist came in nine sizes: 6, 8, 10, 12, 16, 20, 24, 30 and 40. The numbers, found on the scraper inside the bowl, indicate the number of scoops to a quart of ice cream.
