This dressing is light and refreshing – and adds the perfect extra-special touch to a springtime salad. It takes less than 5 minutes to make and has a flavorful balance of lemon, garlic, and anchovy. This is one of the many fantastic recipes in Ruby’s Retro Cookbook – available now!

Ceasar salad on panini toast, with chicken and homemade caesar dressing topped parmesan shavings


1/2 cup olive oil

4 tablespoons fresh lemon juice

2 tablespoons red wine vinegar

3 cloves garlic, minced

2-3 anchovy fillets or paste

2 teaspoons Dijon mustard

1 teaspoon salt

1/2 teaspoon pepper

Fresh healthy caesar salad cooking on wooden table.


Mix all ingredients together and blend!

Keep refrigerated and store in a [vintage!] mason jar.

Shake before serving. Enjoy!
