From Introduction: “Pocket, Pita, or Middle East bread, is a round, flat loaf which is generally hollow in the middle. Each round of the flat bread is called a loaf. It is made of leavened dough, which puffs open upon baking” and “This cookbook deals with how to make pocket bread and the miriad of fillings, plain or exotic, for its use.”

This had many nice recipes...not just pita bread and fillings. Examples: Basic Bread Dough, Whole Wheat Bread, recipes for many fillings, Armenian Spinach Salad, Nutburger, Soybean Peanut Burger, Filbert Loaf, Lebanese Meat Pies, Spinach Pies and more.

Condition: Some edge wear/chipping on the covers. Wear at the binding on the back. Some indenting and scuffing on the covers from shelf wear I suspect. Pages are very clean and still crisp after 20+ years. Very nice recipes.
