This hardback book contains 20 chapters with information covering the handling and preparation of the raw materials, recipes and making of the candy. It also includes industrial topics such as storage, plant layout and packaging. Although the chapters may contain technical and complex explanations of materials and procedures, they are presented in a way to allow even the novice candymaker to learn.
This book is in very good shape. There are no markings on the pages with no folding or tears. All of the black and white photos are also in great shape.
NOTE: This book formerly belonged to the owner of a local and popular family restaurant and candy shop. The basement of the restaurant was set up to make their delicious candies and covered nuts. These candies were absolutely delicious and were the traditional candies and nuts of the old candy shops of many years ago when receiving a box of candy as a gift was considered a special treat.
